Vegan lentils with aubergine, calabizo and tandoori

Delicious and tasty vegan lentils with aubergine, courgette, tandoori masala spices, paprika and cinnamon - spectacular! Nothing to envy to traditional lentils.

 

So says the creator of this delicacy, Silvana Ruíz López, whose recipe is published on Cookpad. She is encouraged to prepare these lentils with pumpkin and with an exotic touch such as tandoori masala spices.

 

Tandoori masala, from India and Pakistan, is a mixture of spices traditionally used in dishes cooked in the tandoor oven (cylindrical oven made of clay) to cook food with charcoal. Tandoori masala could therefore be translated as tandoor oven spice blend.

 

Masala means spice mix, and its ingredients include: chilli powder or cayenne chillies, coriander, garlic powder, black pepper, cinnamon, cumin, fennel, ginger, onion powder, turmeric, cloves, cardamom, fenugreek seed, onion powder, mace (or nutmeg), basil ... an explosion of flavour. ...an explosion of flavour that brightens up many dishes and which in these lentils is ideal for the mixture of flavours together with the pumpkin.

Ingredients

  • 1 large aubergine
  • 1 spicy calabizo
  • 6 heaped tablespoons of crushed tomatoes
  • 1 small drained tin of sliced mushrooms (175 gr.)
  • 1 tin (175 gr.) fried onion
  • 200 g cooked lentils
  • 250 ml. white wine
  • 500 ml. water
  • 3/4 tsp sweet paprika
  • 1 teaspoon tandoori masala spices
  • 1/4 teaspoon cinnamon powder
  • Salt
  • Olive oil

Elaboration

  1. Cut the aubergine into large pieces and fry it in a pan with a little olive oil. When lightly browned, add the tomato and continue frying until the tomato changes colour.
  2. Add the onion and mushrooms and cook for two minutes.
  3. Peel and cut the courgette into chunks, add to the pan and stir for a further two minutes.
  4. Add the lentils, wine and water and boil with the lid on for 10 minutes.Add the salt,
  5. paprika, tandoori, cinnamon and mix well.
  6. Then boil for another 10 minutes and that's it - bon appetit! 😊
